Try removing the email address as a contact in iMessage settings. Which should only allow for recieving iMessages with your phone number.
Also check the phone settings in the settings app. Your mobile number is editable, so you may still have your old number stored in the phone settings.
Probably best to do a fresh restore without using a backup and adding everything manually to your new device.

You need to open it in a packet reader to view the contents, such as wireshark on a PC. There arent really many good packet readers on iOS besides scapy, but that requires a knowledge of python and networking to use.I was going to suggest getting Wireshark on your computer. SSH into your iDevice and copy the pcap file to your desktop. Then open it in wireshark.
