I found some patches I can use for ntdll.  The two files I have problems with are cdrom.c and signal_arm.c.  I removed cdrom.c fom Makefile because I dont think its necessary.  Although signal_arm.c is pretty important and I cant trick that one.  So I hope these patches work.

gotta take a break from this.  Maybe restore my ipod and start again.  I just extracted all the SDKs from xcode and been playing around with them so much I wanna fresh start.

Dude, awesome job! Having wine on the iPod touch (or iphone, for everyone else) would be great. Were you able to fix signal_arm.c?

No im still interested in this though.  I honestly lost interest in iOS for a while so I need to update and get back in the loop.  I've been learning alot of C++ and can actually remember it as I learn it now.  Plus Wine has been updated quite a bit now.  Ill restore my iPod this weekend and try it again.  LOL, good thing I made this tutorial otherwise I would have to start all over again!
